Diabetes

Diabetes mellitus ia a condition which results from a lack of insulin. Insulin is a hormone produced by the pancreas. It is needed for the assimilation of glucose, amino acids and fatty acids by the body for energy or storage. Defiency of or ineffectiveness of insulin results in high glucose level in the blood. The disease cannot be cured but it can be controlled by lifelong treatment. There are two major types of diabetes mellitus. Type I (insulin-dependent) occurs mostly in young people and requires regular insulin injections. Type II (non-insulin dependent) occurs mainly in older people: some can be controlled with proper diet and exercise alone; and others may need antidiabetes medication. Some may also need insulin injections. Most of those who suffer from non-insulin dependent diabetes are overweight or obese. Diabetes tends to run in families.

Symptoms
  • Constant thirst.
  • Polyuria or frequent urination. Getting up frequently to pass urine at night.
  • Frequent hunger, strong appetite.
  • Weight loss despite a hearty appetite.
  • Tiredness, weakness.
  • Tingling sensation and numbness in the hands and feet.
  • Blurred vision.
  • Recurrent skin infections.
  • Itching in the private parts.

Complications
  • Severe hyperglycemia (too much glucose in the blood) with too much acid in the body, can cause confusion and loss of consciousness. (See LOSS OF CONCIOUSNESS page 415.)
  • High blood pressure, heart disease, stroke, and kidney damage.
  • Blindness (due to retinal damage), cataracts, and other eye disorders.
  • Poor healing of wounds.
  • Gangrene (tissue death) due to cut off of blood supply. This usually occurs in the toes and feet.
  • Infection, in particular skin, and soft tissue, vaginal infection.
  • Numbness, due to nerve damage with loss of sensation especially the feet.

Cause
  • Not fully known yet. However, it is beliaved to be due to:
  • Heredity.
  • An autoimmune disorder. The body's defences attack and destroy the cells in the pancreas that produce insulin.
  • A viral infection that damages the pancreas which may than set off an autoimmune process.
  • Lack of exercise, poor dietary habits and obesity.

What you can do
  • Consult a doctor if you think you have diabetes.
  • Stick to a lifelong low-sugar, low-fat, high fibre diet. If overweight, lose weight. Contol your intake of refined sugar. Spread out intake of food over the day. (Diet and weight management are often enough to keep non-insulin dependent diabetes in check and may prevent diabetes-prone people from developing diabetes.)
  • Exercise regularly.
  • Regularly look over your body, especially the feet, for wounds or infection; never walk bare foot. Wash your feet daily, dry them thoroughly, and apply talcum powder. Take extra care when cutting your fingernails and toenails. Shave with care.
  • Practice good hygiene.
  • Maintain good dental health.
  • Take prescribed medicine religiously. Never stop medication without consulting your doctor.
  • Monitor your blood or urine sugar regularly.
  • Have regular medical checkups.

What your doctor can do for you
  • Take blood tests initially to confirm the presence of diabetes and subsequently to check whether blood sugar is under control.
  • Recommend an appropriate diet regimen and exercise.
  • Prescribe anti-diabetes tablets or insulin injections if necessary. Teach you how and where to inject insulin on yourself.
  • Teach you how to monitor the glucose level in your blood.
  • Watch out for the development of complications and treat them.

If you are or suspect you may be pregnant, take extreme care about any medicine you take, particularly during the first 12 weeks - consult your doctor or pharmacist.

Injection sites for insulin:
1. Abdomen - fast absorption 2. Arm - intermediate absorption 3. Thigh - slow absorption 4. Buttock - slow absorption 5. One hand's width from shoulder, elbow, hip and knee 6. Skin 7. Subcutaneous tissue 8. Muscle 9. Inject insul;in into subcutaneous tissue into the fat (between skin & muscle layer)
Foot care for diabetics:
1. Dry the feet well especially between toes to prevent fungal growth.
2. Examine the feet daily for any blister, sore, scratch, skin discolouration, calluses or ingrown toenails. See a doctor immediately if any of these symptoms appear.
3. Change socks or stockings daily. Cotton or wool socks are better as nylon can cause perspiration.
4. Wear soft leather shoes to allow the skin to breathe.
5. Wash feet daily with luke warm water & mild soap.
6. Cut your nails straight across. Gently file rough edges.
7. Keep the skin, heels & soles supple by applying lanolin, but do not apply between toes. If you tend to perspire, dust feet with foot powder or baby powder.
8. Examine your shoes everyday for cracks, pebles, nails & any roughness which may cause skin irritation.
9. Do not walk barefoot either indoors or outdoors. Wear comfortable shoes, slippers or sandals that fit well.
DON'T: a. Soak feet in hot water or use hot water bottle for the feet. b. Use com plasters & other commercial foot preparations.

Recommended exercises for diabetics:
1. Tiptoe exercise: Hold on to a chair. Raise & lower yourself on your toes alternately. Repeat 20 times. 2. Leg swing: Hold on to a table & stand with one leg slightly raised on a thick book. Swing the other leg to & fro 10 times. Repeat the same procedure on the other leg 10 times. 3. Calf stretch: Lean with palms of your hands against the wall. Keep your feet some distance away and flat on the floor. Bend your arms 10 times keeping your back and knees straight without raising the heel. Sustain the stretch for 10 seconds. 4. Knee bend: Hold on to a chair & do deep knee bends keeping your back straight. Repeat 10 times (start with 5 times & increase gradually). 5. Daily walk: Take a walk daily of 1/2 - 1 hour. Try to increase duration every week. 6. Ball roll: Sit on a straight backed chair, with your foot on a rubber ball. Grip the ball with your toes, then relax your hold. Repeat a few times for each foot.

Prevention tips
  • Avoid refined sugar, honey and excessive intake of sweets and simple carbohydrates, fats and salt.
  • If overweight, reduce weight.
  • Exercise regularly. Aerobic exercise (eg. cycling, jogging, vigorous sports, swimming, brisk walking), decreases the risk of heart disease, helps control your weight, and helps the body to maximise the effects of insulin.
  • If you have a family history of diabetes and you are over 40 years, have your blood checked for sugar 2 hours after a good meal. You should repeat this every year or two as many people have diabetes for years without feeling unwell.

Headache

Just about three out of four persons suffer from headache each year. Headache is seldom a symptom of an underlying brain disease, even when the pain is intense. The two main types of headache are migrane and tension headache which are described in the following pages.


Headache-migraine
Migraine
Migrane, a common and painful headache that typically occurs on one side of head, often begins at puberty or early adulthood, runs in families and tends to recur. More women than men suffer from migraines (about 75% of the cases), usually before menstruation, with the attacks tapering off after menopause.

Symptoms
Migraine without aura:
  • Pain, usually felt on one side of the head. It gradually builds up to full throbing intensity and is aggravated by movement, light or noise.
  • Nausea.
  • Vomiting.

Migraine with aura:
  • An aura (unusual sensation) coming about 20 minutes before the headache. The symptoms may include nausea, vomiting, enlarging blind spots, flashing or zigzagging light, strange noises or smells, and numbness in one side of the body.
  • Same symptoms as common migraine, but the onset of pain is more abrupt.
  • Sensitivity to light.
  • In rare cases, paralysis on one side of the body.

Cause
Not yet fully known, but attributed by many experts to chemical inflammation of the dural blood vessels, which stimulate the nerve endings. Factors that trigger the condition include:
  • Stress (eg. anger, changes in climate, distress, overexertion, shock).
  • Certain kinds of beverages, food, and food additives (eg. alcohol, chicken liver, citrus fruits, monosodium glutamate, nitrites, red wines).
  • Head injury.
  • Sensory stimulation (eg. bright light, blaring sounds).
  • Overexertion.
  • Hunger
  • Hormonal imbalance, oral contraceptives.

What you can do
  • Lie down and sleep or rest in a dark, quiet room.
  • Apply an ice pack to the painful area.
  • Take a cold shower.
  • Take simple painkilllers.
  • Try to identify the factors that trigger the headache and avoid them.
  • Consult a doctor if the pain is unbearable or if the recommended measures offer no relief.

What your doctor can do
  • Rule out serious underlying causes of headaches.
  • Prescribe stronger painkillers.
  • Prescribe prophylactic (preventive) medicine for migrane.
  • Prescribe medicine to stop the migraine.

Prevention tips
  • Avoid the factors that can trigger the headache.

Headache-tension headache
Tension headache, Neck ache
A tension headache, unlike a migraine, is characterised by generalized pain, a feeling of fullness or pressure over the top of the head or at back of the neck. It can occur everyday, is not associated with vomiting and is not aggravated by movement. The disorder is the most common type of headache, affecting people of all ages.

Symptoms
  • Dull, sometimes intense pain over the top of the head, the temples, or at the back of the neck.
  • Sore scalp and neck muscles.

Cause
Not yet fully known. Factors that trigger the condition include:
  • Stress (eg. anger, changes in climate, distress, overexertion, shock).
  • Poor posture; not moving for a long period.
  • Depression.
  • Lack of sleep.
  • Eye strain.

What you can do
  • Apply an ice pack to the head.
  • Take a hot or cold shower.
  • Massage head, neck, and shoulders.
  • Do stretching and other relaxation exercises.
  • Discontinue or minimize your intake of caffeine (eg. coffee, tea).
  • Avoid the glare of strong sunlight. Wear sunglasses if you have to stay outdoors.
  • Take simple painkillers.
  • Consult a doctor if:
  1. The headache is continuous or recurs frequently.
  2. The headache is accompanied by fever and stiff neck (may be meningitis), numbness or weakness in the limbs and visual or speech disorders (may be a stroke).
  3. Slight exertion brings on an attack.

What your doctor can do
  • Rule out serious underlying causes of headaches.
  • Prescribe muscle relaxants.
  • Prescribe stronger painkillers.

Prevention tips
  • Relax. Learn relaxation techniques and meditation. Do stretching and relaxation exercises in between extended periods of work or sitting.
  • Exercise regularly.
  • Avoid or minimize stress.
  • Try to get enough sleep.
  • Minimize your intake of caffeine (eg. coffee, tea).
  • Avoid excessive sunlight by staying indoors on bright, sunny days or wearing sunglasses outdoors.

Gout

Gout is a metabolic disease that brings on sudden and intensely painful arthritis (inflammation of the joint). The disorder usually attacks only one joint at a time, often the one at the base of the big toe. Gout tends to run in families and affects 9-10 times more men than women. Occasionally, gout can attack many joints at one time.

Symptoms
  • Red, swollen, and tender joint.
  • Sudden, excruciating pain, which worsens at the slightest movement.
  • Slight fever, in some cases.

Complications
  • Tophi formation.
  • Kidney stones.
  • Kidney failure.

Cause
  • Buildup of uric acid in the blood, which collects and forms crystals in joints or tissues. The crystals irritate the joint, causing inflammation. An attack can be provoked by a sudden rise or fall in the blood uric acid level, eating too much food rich in purine content like organ meats, sardines, wine, and heavy alcohol consumption. About 20% of gout sufferers have a normal uric acid level in the blood during an acute attack.

What you can do
  • Consult a doctor if you suspect gout.
  • Drink plenty of fluids to lessen the risk of contracting kidney stones.
  • Take simple painkillers.

What your doctor can do for you
  • Prescribe nonsteroidal anti-inflammatory medicine.
  • Prescribe specific medicines for gout to maintain normal blood uric acid level.

Prevention tips
  • Avoid factors that can provoke a gout attack.
  • Minimize your consumption of purine-rich food.

"Forbidden" Foods (Foods to Avoid)

Some health problems are prevented and treated by avoiding certain foods, even though the problem or condition itself may not be thought of as a nutritional problem.

ARTHRITIS
Many patients with rheumatoid arthritis (RA) are convinced that they will have less pain by eating certain foods and avoiding others. However, there is very little scientific proof for this, and malnutrition can result if essential foods are avoided unnecessarily.
However, some recent research is showing that avoiding fatty foods, and even avoiding meat altogether, may reduce swelling and pain in many people with RA. But to see real improvement, a very low fat diet must be followed or one must become a strict vegetarian.
Some studies have also shown that going on a complete fast for a day or two gives great relief to some sufferers of RA.
A very low fat diet, a strict vegetarian diet, and 1-2 days of complete fasting - are difficult to adhere to, and not practical. They can also be harmful to health if continued for too long a period of time. Consult your doctor or a Registered Dietitian.
However, overweight and obese sufferers of rheumatoid and other forms of arthritis can minimize their pain by loosing some weight. Eat a variety of healthy foods in moderation be as active as possible.

DENTAL CARIES
Ideas concerning food and dental caries have changed dramatically. Notions such as "sugar rots your teeth...avoid sticky sweets...more sugar in a food makes it more dangerous to the teeth" are to simplistic according to recent dental research.
Carries occur when bacteria in the mouth produce acid that then wears away the hard enamel covering of the teeth. Traditionally, sucrose (table sugar) was thought to be used by the bacteria to make the acid that harms tooth enamel.
New research shows that other sugars can also be used by the bacteria to make acid. These include fructose and glucose, the sugars naturally occuring in honey, fruits, and some vegetables, and also corn sweeteners and other sweeteners used in making canned and packaged foods. Some research suggests that even starchy foods, such as potatoes, rice, wheat flour, may sometimes contribute to caries. Some foods, such as potato crisp, contain little sugar but actively contribute to caries.
Some candies are less destructive to teeth than breads and cookies, and some fruits, such as apples, previously considered safe, can actually contribute to caries. Unfortunately, there is no clear cut way of telling which foods contribute to caries. The best way to avoid caries, therefore, is brushing one's teeth regularly immediately after meals and rigorously swishing water between and arround the teeth after each snack.
Snacking is a major culprit of tooth decay in children and adults, because the teeth are usually not brushed afterward. Particles of food which stay in the mouth contributing to caries.
"Baby-Bottle Tooth Decay" is caused by routinely putting babies to sleep with a bottle of sweet liquid, such as sugar water, milk, formula, and fruit juice, as a pacifier. Plain water should be used instead.

GLUCOSE-6-PHOSPHATE DEHYDROGENASE (G6PD) DEFIENCY
This rare condition is inherited by 3-4% of Chinese males in Singapore and even fewer women. It is tested for at birth. A severe form of anaemia will occur if certain drugs or other substances that trigger it are consumed.
The main food known to trigger G6PD defiency is fava beans, also called broad beans. Canned broad beans are available, but are commonly sold as dried salted snacks.
G6PD deficient persons should also probably avoid taking large doses of the vitamins C and K, especially those found in mega-dose vitamin preparations.
Some suggestions have been made that the Chinese herbs San Tze Chze and Chuan Lian also may trigger G6PD, but this has not been proven.

GOUT
Gout is a form of recurring arthritis that affects the joints of the fingers and toes. Crystals of a type of salt called monosodium urate collect in the joints causing swelling and pain. This salt is from a substance called purine which is produced by the body during metabolism but which also occurs in some foods. Animal organ meats and some seafood are concentrated sources of purines.
Gout patients should avoid these high purine-foods: anchovies, brains, beef kidneys, beef/calf liver, sweetbreads (thymus), herring, mackerel, sardines, and scallops.These foods are also high in purines and should be eaten in moderation: asparagus, whole grain breads and cereals, cauliflower, eel, fresh & saltwater fish, legumes, beans, lentils, and peas, meats, meat soups, broths, and gravies, poultry, shellfish, mushrooms, spinach, wheat germ and bran.

LACTATION
While a mother is breastfeeding, she needs nourishment for herself and to make sufficient milk for the baby's rapid growth and development. A general diet following guidelines for good health is recommended. However, there are a few things that should not be done. A low calorie diet should not be followed while breastfeeding, as breast milk volume can decrease.
Alcohol should only be taken in small amounts, if at all, as large amounts can inhibit milk letdown and many cause poor infant growth.
Caffeine-containing beverages should be limited to 2 cups per day to avoid infant irritability. Chocolate contains a similar stimulant and so should be eaten sparingly while breastfeeding. If herbal tea are substituted for caffeine-containing beverages, avoid teas that may cause nausea, vomiting, etc. This can be transmitted to breast milk and cause similar effects in the infant. Sugar substitutes (artificial sweeteners) should be used in moderation, because the effects on breast milk and the infant are unclear. Drink plenty of liquids to maintain milk volume, but avoid extreme conditions such as dehydration or excess fluids.

DIABETES
For many years, patients with diabetes were instructed to strictly avoid all simple sugars, including sugar and sugary foods/drinks. Recent research has shown, however, that small amounts of sugar or sugary foods may be acceptable in a diabetic diet. These should be taken in substitution for other carbohydrate foods, not in addition to them, as the overall amount of carbohydrate in the diet is still important.
In deciding to substitute some sugar for other carbohydrate foods, the individual with diabetes must still remember that sugar contributes to dental carries. Also, many foods high in sugar content are also high in fat and therefore, in calories. If excess body weight is a concern, such foods should not be eaten often.
For optimal dietary management of diabetes it is essential that the patient consult a registered dietitian for an individualised nutritional plan which will take into account, among other factors, the patient's blood glucose and lipid profiles, weight status and lifestyle.

MIGRAINE
Medical researchers are studying the possible roles of food in causing migraine headaches, but no conclusions have been reached yet. Research shows that in some people, migraine can be triggered by alcoholic beverages, chocolate, cheeses, and foods that are salted, pickles and cured. This is thought to be caused by the large amounts of certain types of protein which they contain. However, some migraines are not caused by these foods.
Migraine patients are advised to keep detailed food diaries to try to determine which food, if any, trigger their migraine.

Arthritis

Arthritis is the inflammation of a joint and may be a symptom of many disorders. It is marked by pain, stiffness, and swelling of one or more affected joints. The degree of severity ranges from mild pain and stiffness, to excruciating pain and eventual joint deformity. Although no cure has yet been found for the disorder, it can be properly managed to allow you to lead a normal, active, and productive life. The most common types of arthritis are osteoarthritis and rheumatoid arthritis.

Arthritis-osteoarthritis
Osteoarthritis, also known as degerative joint desease, occurs when the cartilage lining the bony surfaces of joints breaks down or when spurs (bony out-growths) develop. The condition is caused by the excessive wear and tear of joints resulting from overuse of a joint, obesity, or malalignment of the bones forming a joint. Most affected are weight-bearing joints such as the lower back, hips and knees. Osteoarthritis commonly affects the elderly though not all exhibit symptoms.

Symptoms
  • Painful joint, which usually worsens with exercise.
  • Swelling of affected joint(s) and occasionally, inflammation.
  • Creaking and stiffness, which restrict movement and occasionally disrupt sleep. The muscles surrounding the affected joint become weak from disuse.
  • Joint deformity.

Cause
  • Wearing out of the cartilage (elastic tissue) lining the bone ends in a joint due to excessive strain over prolonged period of time or due to other diseases, injury or deformity.

What you can do
  • Consult a doctor who will determine the type of arthritis you have.
  • Rest the joint untill the pain subsides to prevent further inflammation.
  • To ease the pain or stiffness of the joint, apply heat on the joint for about 15 minutes once or twice a day using a hot water bottle or towel, or an infrared lamp.
  • If the pain is severe, apply a cold pack (ice cubes wrapped in a towel).
  • Take simple painkillers.
  • If overweight, reduce weight to lighten the load on weight-bearing joints.
  • Regular exercise.

What your doctor can do for you
  • Take X-rays and do other tests to determine the type of arthritis.
  • There is no cure. Beware of 'miracle cures'.
  • Prescribe strong anti-inflammatory medicine.
  • Recommend occupational therapy.
  • Recommend physiotherapy, which includes exercises and heat treatment.
  • In severe cases, surgery can be done. Type of surgery will depend on your age and severity of the desease. In elderly with severe desease, joint relcement (artificial joint) can give good results.

Prevention tips
  • Avoid excessive exertion.
  • Avoid a particular activity temporarily if the affected joint starts to hurt.
  • If overweight, reduce weight.
  • Always maintain good posture.

Arthritis-rheumatoid arthritis
Unlike osteoarthritis, rheumatoid arthritis is an inflammatory desease which can affect people of all ages. It usually starts in the fingers and can affect several simultaneously. Some people may suffer from only one attack of this desease in their lives. In others, the desease may be long-term and progressive.

Symptoms
  • General feeling of malaise (lethargy, generalized aches and pains).
  • Pain in the affected joint.
  • Swelling of the joint.
  • Stiffness, which restricts movement, especially early in the morning.

Complications
  • Severe deformity of the joint(s). Affects 1 in 10 people with progressive disaease.
  • Pericarditis (inflammation of the membrane enclosing the heart).
  • Inflammation of blood vessels, causing ulcers to occur over the hands and feet.
  • Pleural effusion (fluid accumulating between the layers of the membrane lining the lungs and the chest cavity).
  • Scarring and thickening of lung tissue.
  • Enlarged spleen.

Cause
  • Not fully known.

What you can do
  • Consult a doctor to find out what type of arthritis you have.
  • Rest the joint untill the pain subsides, then resume normal activities to prevent stiffness.
  • Keep the joint warm at night and in cold weather (eg cover with blanket at night, wear socks or cotton gloves, etc).
  • Take simple painkillers.
  • Swim, preferably in heated swimming pools.

What your doctor can do for you
  • Take X-rays and do other tests to determine the type of arthritis and assess disease activity.
  • Prescribe anti-inflamattory medicine, strong painkillers or special medicines.
  • Recommend physiotherapy to relive pain and stiffness, improve joint movements and strengthen muscles.
  • Recommend occupational therapy to help a patient who has been disabled by the disorder cope with daily activities and tasks.
  • Recommend surgery to reduce pain, correct deformities and improve function of the affected joints.

Obesity

Weight control, Overweight
A person gains weight if he eats more than what his body uses, has little physical activity, or has a low basal metabolic rate resulting in too much body fat. Obesity, which usually runs in families, leads to many health problems and shortens life expectancy.

Symptoms
  • Body weight of at least 20% in excess of normal body weight for his height, age, sex, and build.
  • Shortness of breath.
  • Sweatiness, overheating.

Complications
  • Diabetes mellitus.
  • Heart disease.
  • High blood pressure.
  • High blood cholesterol.
  • Osteoarthritis (inflammation of a joint due to the wearing out of the cartilage that lines it).
  • Back problems.
  • Cancer of the colon, rectum, prostate (in men), or breast, cervix, or uterus (in women).
  • Psychological problems, low self-esteem.

Cause
  • Overeating. Excess calories are stored as fat.
  • Sedentary lifestle (low physical activity, little or no exercise).
  • Low basal metabolism; hypothyroidism (unusually slow metabolism), in rare cases.

What you can do
  • Consult a doctor.
  • Reduce your weight by eating less and following a low-fat, high-fibre diet.
  • Begin an aerobics exercise program, but do not do it on your own. Seek the assistance of a trained instructor.
  • Engage in aerobic exercise activities eg swimming, cycling, walking, jogging, walk up stairs instead of using lifts. For the severe overweight start with non-weight-bearing exercise like swimming, cycling and water aerobic to prevent damage to the knees and ankles.

What your doctor can do for you
  • Determine the cause of the obesity and treat it.
  • Treat the complications.
  • Refer you to the dietitian.
  • Refer you to a psychiatrist for behavior modification therapy.
  • Check for contraindications to the weight control and aerobics programs.

Preventions tips
  • Always eat a balanced diet. Eat moderately sized meals. Eat low fat, low sugar but high fibre diet.
  • Exercise regularly.
Eat a balanced diet:
1. Avoid food high in sugar and fat.
2. Eat moderate amounts of starchy food, poultry & fish.
3. Eat more food with high fibre content.

5/15 Tentang Saya..Saya Seorang.. (Tag By Aini)

11. Saya seorang anak kampung..
..kampung kelahiran saya..
..tempat saya dilahirkan..tempat saya menghabiskan zaman anak kecil..
..berlari-lari di padang..bermain to-kubang..meniti titian di alur..memerhati berudu ungu yang besar saiznya di air yang jernih..mengail..mengutip buah kerian..bermain di tangga rumah Mak Nik..melihat Mek Limah mengayam tikar mengkuang..mengikut Mek Limah mencabut anak-anak padi....membiarkannya terendam di dalam air yang bergenang..memerhati pesawah mengangkut gemal-gemal padi..terhenjut-henjut di batas-batas sawah..dengan kandaran..mengutip siput hitam di bawah gertak kecil..berenang (tapi tak pandai) dan menyelam..menemani kakak menghantar bekalan untuk ibu dan kakak yang mengetam di padang..di balik sana jalan keratapi..menunggu kemunculan keretapi dari arah Gertak Bakat..melintasi padang..hingga hilang di sebalik semak rimba mendekati Sslow..menolong kakak mengelak itik pulang..mengail semut dari lubang..melihat kawan-kawan berlawan main pecah buah getah..mendengar bunyi gemersik dedaun buluh bergeseran..mendengar ibu/kakak mengeloi daripada jendela berpalang (besi=wrought iron?)..kami berlari-lari pulang kala senja mendatang..kegelapan menyelubungi..yang tinggal adalah kesuraman di bawah naungan pokok-pokok getah..dan pokok medang..
..kampung tempat saya meniti zaman awal keremajaan..
..bersama kakak abang dan adik-adik..juga sepupu-sepupu..dan jiran-jiran perkampungan yang mesra..
12. Saya seorang anak daerah..daerah tempat tinggal saya..tempat saya menghabiskan zaman persekolahan menengah..dengan ceria menghadapi pelajaran ..dan aktiviti-aktiviti sukan..bersama teman-teman..

Pelbagai Roti Telur

Pastikan kulit telur dibasuh bersih dan suci sebelum menggunakannya!

Dulu-dulu saya tak biasa makan roti dengan telur, apatah lagi seperti yang anak-anak kami suka makan sekarang ini..

Roti Telur Nadwah Kepimpinan
(Roti dengan telur separuh masak)
Saya namakannya sedemikian kerana saya menjumpainya kali pertama rasanya semasa saya menghadiri Nadwah Kepimpinan Islam di Kem Kijang, 1981. Ketika itu saya berada di tingkatan lima, dipilih oleh Ustaz Ismail, guru mata pelajaran Pengetahuan Agama Islam kami untuk mewakili sekolah ke nadwah tersebut bersama Noor Halifah Hassan tetapi oleh sebab Noor tidak dapat pergi, Ustaz meminta kawan baik saya Rosnani menemani saya.

Kami berada di sana selama lebih kurang 2 hari 2 malam ..so adala sarapan pagi..itulah dihidangkan 2 keping roti dengan telur separuh masak dan kicap. Oleh kerana di rumah tidak pernah bersarapan sebegini, saya tidak tahu sebenarnya sebagaimana sepatutnya ia dimakan. Jadi saya ikut sajalah cara sesetengah (atau kesemua?) peserta lain memakannya iaitu dengan meletakkan telur separuh masak bersama kicap di atas kepingan roti.

Semasa saya mengikuti kursus matrikulasi sains di sebuah sekolah berasrama penuh di utara tanahair pun ada hari yang kami dihidangkan dengan sarapan sebegini. Jadi saya memakannya seperti yang pernah saya memakannya di nadwah tersebut. Sebenarnya saya tidak pasti cara sebenar memakan roti yang dihidang bersama telur separuh masak ini.

Ibu mertua saya pula memakannya dengan cara memecahkan telur separuh masak ke dalam sebuah mangkuk, memasukkan kicap ke dalam mangkuk itu bersama-sama dengan kepingan roti yang dicebis-cebis dan kemudian memakannya dengan menggunakan sudu.

Roti Telur Mak Lang
(Roti Telur dengan Sambal Kerang)
Di sekolah menengah sains itu jugalah, 1982-1983, di waktu petang-game time ataupun di waktu malam sehabis kelas prep, kami ke kantin dan berebut-rebut sambil menjerit-jerit sampai akhirnya suara kami menjadi perlahan dan tenggelam hingga kami sendiri sahaja yang dapat mendengarnya.."Mak Lang, Mak Lang nak roti telur satu, nak roti telur satu Mak Lang".. Mak Lang pantas melayani kami yang memerhatinya menyediakan roti telur tersebut..menyendukkan sambal kerang ke dalam belahan roti bulat yang besar, macam roti burger tetapi lebih besar dan lebih lembut dan memasukkan sebiji telur goreng mata kerbau ke dalamnya..60 sen sebiji.. sedap roti telur dengan sambal kerang Mak Lang ini..teringat-ingat sampai sekarang..

Roti Telur Brother
(Bombay Toast)
Semasa di tahun satu pula, 1984-1985, saya dan kawan-kawan suka singgah di Kantin Desasiswa B, sementelahlah saya memang tinggal di desasiswa ini semasa di tahun pertama ini. Booth burger, sepulang dari library atau lecture malam..saya suka order dari brother yang menjual, yang tidak banyak cakap cuma tersenyum itu..roti bulat sebesar roti burger tetapi lebih lembut yang disalut telur dan gula kemudian dimasak di atas kuali..sedap juga..kalau tidak silap saya namanya Bombay Toast..tetapi kalau saya silap.. maknanya Bombay toast ini adalah roti bulat leper dan nipis yang ditaruk sardin di dalam belahannya dan dikepit dengan satu alat macam acuan..ala-ala acuan kueh kapit tetapi berlekuk sedikit.. untuk menampung ketebalan roti itu..

Egg benjo
Yang ini semua tahu kan..inipun saya kenal di Kantin Desasiswa B semasa di tahun pertama itu jugalah..telur mata kerbau yang dimasak dalam acuan bulat lebih kurang acuan donat untuk memastikan telur betul-betul bulat sesuai dengan kebulatan roti burger..taruk telur yang sudah masak itu ke dalam belahan roti bulat burger bersama sos cili/tomato, hirisan bawang besar, timun, tomato dan salad, pun di sekitar 60 atau 70 sen sebiji sahaja pada masa itu..

Roti Burger/Frankfurter Telur
(Burger/Frankfurter Telur)
Burger/frankfurter yang telah dimasak dibungkus di dalam telur dadar yang nipis..diletakkan dalam belahan roti burger/frankfurter dengan segala kelengkapannya..sos dan salad..dll menjadikannya burger/frankfurter special apabila ditambah cheese. Semasa di kampus dulu kami mengenali frankfurter dengan nama hotdog..di booth brother itu jugalah..

Roti John
Yang ini saya kenal semasa sudah berkahwin dengan suami saya di Kuala Lumpur ini..samada di beli dari pasar malam berhampiran dengan taman perumahan kami ataupun dari gerai-gerai di tepi-tepi jalan, pilih gerai yang bersih tau dan ada 'screen saver' alias pelindung habuk?. Saya tidak berapa pasti bagaimana atau dengan apa bancuhan yang digunakan untuk roti John ini dibuat tetapi agaknya telur samada dibancuh dengan cincangan daging ayam ataupun daging lembu ataupun tidak. Saya lihat pembuat roti John menyendukkan bancuhan itu dan dilirai di atas kuali leper macam kuali burger itu..mengikut bentuk roti John yang panjang dan telah dibelah dua tanpa putus..separuh masak atau hampir masak..roti yang dibelah dua tadi ditekap ke atas liraian bancuhan..biarkan sebentar..diterbalikkan sebentar kemudian diangkat..disapu dengan mayonis..sos cili/tomato dan taruk hirisan salad, timun, tomato dan bawang besar..tangkupkan semula roti itu..

Sardin Roll
Cincangan sardin yang digulung di dalam kepingan roti..dan diroll dengan bancuhan telur..seterusnya dimasak dengan sedikit Planta..

Roti Canai Telur
Yang ini pun semua sudah tahu kan..? Order je kat mamak roti canai tu..dia akan mencanai roti canai yang sudah diperam semalaman itu..menebarnya..dan memecahmasuk sebiji telur ke dalam tebaran roti canainya..pastikan telur dibasuh ya..melipatnya dan memasaknya di atas kuali leper roti canai..dibiarkan masak/garing..angkat dan sedia untuk dibungkus..dimakan bersama kuah dhal atau kari dengan sedikit sambal..

Di Rumah Kami,
Roti Telur

Semasa mula-mula berkahwin dulu, saya diminta oleh anak-anak untuk menyediakan roti telur..saya tidak tahu bagaimana untuk menyediakannya..kemudian saya lihat anak lelaki pertama kami yang berumur 11 tahun pada masa itu..memasaknya..panaskan kuali leper..kuali yang biasa orang kirai roti jala tu.. macam kuali penjual burger jugalah..cuma saiznya lebih kecil...pecahkan sebiji telur ayam di atas kuali itu setelah diletak sedikit Planta..biarkan ia masak samada dengan mengacau telur kuningnya ataupun tidak..terbalikkan sekejap dan angkat. Sapu pula dua keping roti dengan Planta di kedua-dua belah roti, dan letakkan di atas kuali leper tadi. Biarkan masak/garing, terbalikkan dan angkat. Letakkan telur yang sudah dimasak tadi di atas sekeping roti yang sudah dimasak itu, letakkan sos cili, tambahkan serbuk lada putih dan tutup dengan roti yang sekeping lagi. Sedia untuk dimakan.

Kalau hendak lagi advance, taruklah hirisan bawang besar, cili atau salad, timun, tomato dan kobis, tetapi anak-anak lelaki kami tidak suka sayur mayur ini. Lagi advance taruhlah mayonis dan cheese, yang ini memang dia orang suka..tetapi saya ingatkan..belilah mayonis dan cheese yang anda benar-benar yakin akan kehalalannya..

Kadang-kadang kami juga menggunakan acuan telur egg benjo, lenserkan sedikit Planta ke acuan, inipun saya tengok anak lelaki pertama kami membuatnya..letakkan di atas kuali leper yang dilenser dan pecahkan telur ke dalam acuan..biarkan masak..keluarkan dari acuan dan makan dengan roti bulat..dan sos..dll

Roti Celup Telur
Yang ini pula saya tengok anak perempuan sulong kami membuatnya..sebenarnya saya sudah pernah melihat kakak sulong saya menyediakannya untuk bekal anak-anaknya ke sekolah dulu-dulu..di sekitar tahun 1980..pecahkan telur..kacau ringan, anak sulong kami mengacaunya dengan jari telunjuknya sahaja..panaskan kuali leper..celup kepingan roti ke dalam telur..kakak saya memotong serong dulu kepingan roti menjadikannya berbentuk segitiga sebelum dicelup telur..anak perempuan sulong kami tidak memotong pun roti itu...dan letakkan di atas kuali leper panas yang telah dilenser dengan Planta atau minyak masak..masak hingga masak/garing..terbalikkan dan angkat. Setelah siap dimakan dengan menyicahnya dengan sos cili..anak-anak kakak saya menyicahnya dengan gula pasir putih. Untuk hasil salutan telur agak tebal/berat kakak saya menggunakan sebiji telur bersaiz besar untuk dua keping roti Gardenia/HiFi..

Saya juga pernah tengok kawan saya mencelup kepingan roti ke dalam bancuhan telur dengan menggunakan garfu..dengan cara ini kita boleh lebih menjimatkan telur..kerana adunan telur itu tidak sempat menyerap ke dalam roti seperti jika kita merendamnya..

Anak perempuan kedua kami mengesyorkan saya mevariasikan rasa dengan meletakkan serbuk lada ke dalam pukulan telur ataupun serbuk kari..sebenarnya apapun yang kita nak letak terpulang kepada kesukaan kita..dan tekak kita larat menelannya..samada hirisan daun bawang, daun sup, bawang besar, bawang putih, cili dsb..

Minggu lepas semasa saya dan kawan-kawan bertandang ke rumah jiran di depan rumah saya, dia menyediakan roti celup telur yang sudah siap dimasukkan gula..lebih kurang macam Bombay Toast Brother itu..tetapi menggunakan kepingan roti..

Roti Telur Hancur
(Sandwich Telur/Scramble Egg)
Rasanya saya pernah dengar orang memanggilnya scramble egg..tidak ingat pula kali pertama saya menjumpainya di mana..mungkin di universiti..Anak-anak di rumah kami pun biasa menyediakannya. Panaskan kuali dan masukkan sedikit minyak/Planta..setelah panas, pecahkan telur ke dalam kuali..dan kacau hingga hancur. Angkat dan dimakan dengan roti dan sos. Boleh digaul dengan mayonis. Ini diajar oleh anak lelaki kedua kami ..dan dikepit dengan dua keping roti, menjadikannya, sandwich telur. Boleh juga ditambah cincangan bawang, daun bawang, cili, kacang panjang, kobis bunga, kobis, salad dll semasa mengacau telur tadi, bagi yang suka sayur-sayuran.

Roti Telur Burger/Frankfurter
Anak lelaki kedua kami juga biasa meminta saya memotong burger/frankfurter kepada kepingan kecil..memasaknya di atas kuali sehingga masak..membungkusnya dengan telur dadar nipis dan dimakan dengan roti burger/frankfurter ataupun roti biasa..

Roti Telur Mewah
Masakkan burger, frankfurter, telur mata kerbau..french fries..hidangkan dengan hirisan salad, tomato, bawang besar, timun..sedapkan dengan serbuk lada putih, sos cili/tomato, mayonis, cheese..makanlah dengan roti..

Roti John Ala Sofia Jane
Kemudian saya jumpa resepi roti John oleh Sofia Jane dalam sebuah majalah..itulah saya tahu bancuhan itu ditaruk telur, susu cair, serbuk kari, serbuk lada putih dan garam halus ditambah dengan cincangan daging burger ayam atau lembu. Cara membuatnya saya tiru seperti yang pernah saya tengok di pasar malam..

Roti Telur dengan Sardin
(Sardin Roll)
Kami suka memasak dulu sardin tersebut..(ala-ala sambal sardin..)..letak di atas kepingan roti dan gulung sambil dicelup di dalam pukulan telur.. ..masak di atas kuali leper yang dilenser dengan Planta..kena roll-roll juga lah agar serata masaknya..

Roti Canai Tempek Telur
Kami biasa order roti canai telur dan roti canai biasa..tetapi bila balik ke rumah..kadang-kadang anak-anak tidak mahu makan roti canai biasa..kadang-kadang roti canai biasa tidak habis hingga ke petang atau malam malah hingga ke keesokan harinya..kadang-kadang sengaja dibeli lebih sebab sudah tahu apa yang hendak dibuat dengan lebihan roti canai biasa ini..boleh pula dibuat makan petang atau malam..anak kami meminta saya meletakkan telur pada roti canai biasa itu..agak terpinga-pinga juga saya pada mulanya..macam mana hendak meletakkan telur pada roti canai yang sudah siap dimasak itu..manakan boleh hendak memasukkan telur ke dalamnya..akhirnya saya tahu..rupanya..panaskan kuali leper..letakkan roti canai biasa yang dibawa balik dari kedai mamak di atas kuali leper itu..samada dengan dilengser Planta atau tidak..kemudian pecahkan sebiji telur ke atas roti canai biasa itu..rata-ratakan sedikit..angkat sebentar roti canai dari kuali dengan sudip..biarkan lebihan telur di atas roti turun ke kuali..letak balik roti canai di atas lebihan telur itu..biarkan sebentar..terbalikkan dan angkat..sedia untuk dimakan..samada dengan kuah dan/atau sambal atau susu pekat manis ataupun gula pasir putih..

Sebenarnya saya sendiri lebih suka roti canai biasa yang ditempek telur ini berbanding dengan roti canai telur biasa..sebabnya telurnya lebih garing dan berbau wangi..anak-anak di rumah pun suka..kosnya tentu lebih jimat..kerana harga roti canai telur dua kali ganda harga roti canai biasa menjadikan mark-up itu juga double daripada harga sebiji telur yang dalam lingkungan 25 ke 30 sen sahaja..

Akhirnya,
Sedap memang sedap..mudah memang mudah..cepat memang cepat..tetapi ingatlah juga kesihatan anda..

Konsep halalan thoyyiban perlulah diamalkan sepanjang masa dalam menyediakan masakan dan menjamu selera..keluarga anda..

Saya nak buat catatan tentang fungsi diri saja kali ni..harap saya dapat mencakup semuanya..tak tertinggal di mana-mana..

kepada kakak-kakak abah saya yang seramai 2 orang, Allahyarhamah HbtI dan Allahyarhamah ABbtI, dan

yang saya pun dah pening nak mengiranya daripada cicit, ciut dan seterusnya.. tiga pupu, empat pupu dan seterusnya..dan lagi..dan lagi..dan seterusnya..dan seterusnya..yang saya pun dah terkira berapa jumlahnya..

sejak hampir 44 tahun yang lalu dan

kepada 3 adik perempuan dan 2 adik lelaki, termasuk kepada Allahyarham adik lelaki saya yang meninggal dunia semasa dilahirkan lebih kurang 37 tahun lalu, sejak yang paling awal lebih 42 tahun yang lalu.

2. Saya seorang..
..ipar..
kepada suami/isteri adik beradik saya yang seramai 9 orang sejak yang paling awal, lebih kurang 36 tahun yang lalu dan yang paling baru sejak 2 tahun lalu,

..ibu saudara..
kepada anak-anak adik beradik saya yang seramai (7+4+0+6+3 dan 0+5+0+1+1) =27 orang setakat ini, sejak yang pertama lebih 35 tahun yang lalu dan yang terbaru 5 hari lepas,

..ibu saudara sabit..
kepada suami/isteri anak-anak saudara saya (4+2) =6 orang, sejak yang pertama lebih kurang 10 tahun yang lalu dan

..nenek saudara..
kepada anak-anak kepada anak-anak saudara saya yang seramai (3+4+2 dan 2+3) =14 orang sejak yang paling awal lebih kurang 9 tahun yang lalu dan yang paling baru..masih dalam kandungan (yang ke 15?), InsyaAllah.

kepada Allahyarham bapa mertua saya, HWHbinHWA, yang telah meninggal dunia lebih 15 tahun yang lalu, dan ibu mertua saya HWSbtHWA,

kepada 3 anak perempuan dan tiga anak lelaki suami saya dan Allahyarhamah isterinya yang pertama, yang telah meninggal dunia lebih 13 tahun yang lalu, tidak termasuk seorang anak lelaki yang telah meninggal dunia semasa lahir hampir 28 tahun lalu,

kepada adik beradik suami saya yang seramai 7 orang tidak termasuk seorang yang telah meninggal dunia semasa kecil,

kepada 3 anak perempuan kepada anak sulong kami sejak yang paling awal lebih 3 1/2 tahun yang lalu dan yang paling baru sejak lebih 3 bulan lalu.

5. Saya seorang murid..kepada guru-guru saya di..
..sekolah rendah (1971-1976), sekolah menengah rendah (1977-1979), sekolah menengah (1980-1981),
..matrikulasi (Jun 1982- April 1984), universiti (Julai 1984-April 1989),
..kelas bahasa Inggeris (1991), kelas akaun (1992-1993), kursus DBM (Julai 1994- Dec 1995),
..kelas harfiah/tafsir al Quran Secara Lafziah (Ogos 2002-sekarang) dan kelas Mengaji Al Quran (Dec 2005-sekarang).

.. semasa menjalani Latihan Mengajar I (April-Mei, 1986) di Kangar dan Latihan Mengajar II (Jan-Mac, 1987) di Kuala Kangsar dan
.. di kelas al Quran di rumah saya (1998-2005).

..kawan-kawan saya semasa saya lahir dan membesar di kampung kelahiran saya, di Kg. KK,
..kawan-kawan saya semasa saya membesar dan menjadi remaja saya di Kg. GS,
..kawan-kawan sekolah saya semasa di sekolah rendah, menengah rendah dan menengah,
..kawan-kawan saya semasa saya sedang menuntut di matrikulasi dan universiti,
..kawan-kawan saya di tempat kerja dan di tempat tinggal sementara,
..kawan-kawan saya di kelas-kelas bahasa Inggeris dan akaun, dan semasa di ITP,
..kawan-kawan saya di kelas Harfiah Al Quran dan di kelas-kelas Pengajian Al Quran, Tajwid dan Fardhu Ain.

8. Saya seorang jiran kepada..
.. jiran-jiran saya semasa saya tinggal di sebuah negeri di utara tanah air,

.. jiran-jiran saya di kejiranan sekarang ini.

9. Saya seorang saudara di dalam Islam..kepada semua saudara saya seagama samada saya pernah mengenali mereka ataupun tidak tak kira di mana mereka berada ..

10. Saya seorang hamba Tuhan kepada Al Khalik, Tuhan Yang Telah Menciptakan saya sejak di alam roh, rahim, dunia.. dan kepadaNya lah tumpuan ibadah saya, hidup dan mati saya.. kerana kepadaNya nanti saya akan dikembalikan..dan diperhitungkan..

Siapa pun saya..saya adalah insan..seperti anda..yang ada kelebihan..dan kekurangan..di mana-mana..

Cara-cara Menanam Uri

Adik bongsu saya yang baru menyambut kelahiran cahaya mata pertama pagi tadi menelefon bertanya di mana hendak ditanam uri dan bagaimana. Saya yang tidak berapa tahu tentang ini melanjutkan pertanyaan beliau kepada suami.

Kata suami saya, uri bukanlah bahagian tubuh manusia walau bagaimanapun kita menghormatinya. Beliau pun menerangkan cara-cara menanam uri seperti di bawah ini :

1. Basuh uri dengan air.. agar ia bersih daripada darah.. tertinggal sikit-sikit tak apa.. macam kita bersihkan daging..
2. Bungkus uri yang telah dibersihkan dalam kain putih.. kalau tak ada kain putih pun tak apa.. gunalah kain lain..
3. Ikat bungkusan kain berisi uri itu.
4. Masukkan bungkusan uri ke dalam tempurung betina.. tempurung yang ada lubang tu..
5. Tutup dengan bahagian tempurung yang lagi satu..
6. Gali tanah sedalam mungkin.. sedalam agak-agak tak dibau dan dikorek anjing nanti..
7. Letakkan tempurung berisi uri dengan keadaan bahagian berlubang ke arah bawah tanah.. agar kandungan air dalam uri akan mengalir ke bawah tanah nanti dan agar senang ia mereput ..
8. Akhir sekali.. timbuslah.

Koleksi Ucapan Selamat Hari Raya 2008


Kita masih dalam mood berhariraya mungkin..walaupun masing-masing sudah mula berada di ibukota meninggalkan kampung halaman dan ibunda tercinta..kampung mula sunyi..suasana hari raya beransur pergi..tetapi di kota raya ini kita sedang menghilangkan keletihan akibat perjalanan jauh sesambil menunggu kedatangan hujung minggu yang bakal dimeriahkan dengan jemputan rumah terbuka dan ziarah menziarahi sesama sanak saudara dan sahabat handai yang ada..

Pagi ini, 07:07:36, saya menerima khabar gembira..melalui khidmat pesanan ringkas..daripada adik bongsu saya yang baru dianugerahi Allah nikmat rezki yang tak terhingga memperolehi cahaya mata pertama setelah bertahun-tahun mendirikan rumahtangga. "Alhamdulillah cahaya mata kami telah selamat dilahirkan jam 4.28 pg ni. 2.95 kg. Boy", smsnya. Alhamdulillah saya tumpang gembira dan turut bersyukut ke hadhirat Illahi di atas kurniaan ini. Tahniah daripada kami, suami saya menyuruh saya membalas smsnya dengan ucapan tahniah dan ucapan semoga bertambah seorang lagi rijjal yang akan memikul amanah ummah.

Kita tinggalkan dulu berita itu..sebenarnya sudah beberapa hari saya hendak memuat turun ucapan-ucapan selamat hari raya yang memenuhi kotak memori telefon bimbit saya ini..saya mulai dengan..
